Mexican-style eggs

Mexican-style eggs are a delicious way to prepare scrambled eggs, with tomato, chili, and onion.

  • 6 eggs, large
  • 4 tablespoons vegetable oil
  • 1 cup tomato, finely chopped, unpeeled
  • 3 tablespoons onion, finely chopped
  • 4 serrano chiles, finely chopped

  • Mix the eggs in a bowl and combine them with a little salt (do not beat them).
  • Heat the oil in a large skillet. Add the tomatoes, onion, peppers, and mix them well, frying them on low heat. Stir occasionally for 3 to 4 minutes or until most of the liquid has evaporated.
  • Add the eggs and stir them constantly until they are firm, about 4 minutes. Serve immediately with corn tortillas.
