Mix the eggs in a bowl and combine them with a little salt (do not beat them).
Heat the oil in a large skillet. Add the tomatoes, onion, peppers, and mix them well, frying them on low heat. Stir occasionally for 3 to 4 minutes or until most of the liquid has evaporated.
Add the eggs and stir them constantly until they are firm, about 4 minutes. Serve immediately with corn tortillas.
