Microwave Banana Cake

  • 1 lady finger banana
  • 1 egg
  • 2 tablespoons almond flour
  • 1/4 teaspoons baking powder
  • 1/2 tablespoons walnuts, finely chopped
  • 1 tablespoon Karo® Maple
  • 1 tablespoon Aladino® Peanut Butter
  • 1 pinch cinnamon
  • 2 tablespoons almond milk
  • 1 cup unsweetened Greek yogurt, for the topping
  • 2 tablespoons Karo® Maple, for the topping
  • 1 pinch cinnamon powder, for the topping
  • lady finger banana, sliced, for decoration
  • walnuts, finely chopped, for decoration

  • Mash the bananas until pureed in a bowl using a fork. Then add the egg, almond flour, baking powder, walnuts, Karo® Maple, Aladino® Peanut Butter, cinnamon, almond milk, and mix with a spoon or silicone spatula, folding until homogeneous. Set aside.
  • Pour into an individual cup and microwave for 2 minutes; you will notice how the pancake mixture begins to rise and achieve a fluffy consistency, as well as a sweet smell. Once the time in the microwave is up, let it rest for 5 seconds before removing from the oven, being careful as it will still be hot. Cool slightly.
  • For the topping: Mix Greek yogurt, Karo® Maple, and cinnamon. Set aside.
  • Place a little yogurt topping over the banana cake, decorate with chopped walnuts and a bit of Karo® Honey.
