Molletes with Chorizo and Pico de Gallo

This dish is always the most popular choice for breakfast or dinner, delicious molletes made with toasted bolillo with butter, spread with refried beans, golden brown chorizo, rich asadero cheese, with a tangy and spicy touch from pico de gallo salsa. Incredible.

  • 4 bolillo rolls, cut in half
  • 1/4 cups butter
  • 1 cup refried beans
  • 1 cup chorizo, golden brown
  • 1 cup asadero cheese, grated
  • 1 cup pico de gallo, for garnish

  • Preheat the oven to 200° C
  • On a griddle, toast the bolillos with a little butter. Remove from the griddle and spread with warm refried beans.
  • Place the chorizo on the bolillos, cover with asadero cheese. Bake until the cheese is melted and bubbly, remove from the oven and set aside.
  • Serve the molletes on a plate accompanied by pico de gallo salsa, enjoy.
