Molletes with Red Chilaquiles

The molletes and chilaquiles on their own are an ideal and delicious breakfast to start the day, but combined they are an explosion of flavors along with Del Fuerte® puree. Don't miss these molletes with red chilaquiles; they are easy and quick to prepare.

  • 2 boxes Del Fuerte® Seasoned Ground Tomatoes, 210 grams each
  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • salt
  • pepper
  • 2 cups tortilla chips
  • 4 bolillo rolls
  • 4 tablespoons butter
  • 1 cup refried beans
  • 1 cup Manchego cheese, grated
  • sour cream
  • cheese
  • pico de gallo, for serving

  • Heat a skillet over medium heat with vegetable oil and sauté the onion and garlic for 3 minutes, until the onion becomes transparent. Then add the containers of Del Fuerte® crushed tomatoes with chipotle, cumin, and oregano. Season with salt and pepper and cook for 5 more minutes.
  • Add the tortilla chips to the sauce, mix, and remove from heat, letting it rest until use. This will help soften the tortilla.
  • Cut the bolillos in half and spread butter, then toast for 5 minutes in the oven at 200 °C. Remove and set aside.
  • Spread refried beans over the bolillos and add manchego cheese. Broil for 5 minutes in the oven and remove.
  • Serve the molletes, add the chilaquiles on top, drizzle with cream, sprinkle with cheese, and accompany with pico de gallo.
