Oatmeal with Guava

  • 1/4 cups piloncillo, ground
  • 1 teaspoon cinnamon powder

  • 2 cups oats
  • 1/4 cups peanuts
  • 1/4 cups cranberries
  • 1/4 cups pumpkin seeds
  • 1/4 cups amaranth
  • 1 cup yogurt
  • 3 tablespoons honey
  • 2 tablespoons lime juice
  • lime zest

  • In a saucepan, cook the guava in water with the piloncillo, ground cinnamon, and citrus peel for 8 minutes. Cool.
  • In a medium skillet, toast the oats while stirring. Add the peanuts, blueberries, pumpkin seeds, and amaranth; mix and toast for another 10 minutes over low heat, stirring continuously. Set aside.
  • In a bowl, mix the yogurt with honey, lemon, and zest until combined. Chill for 30 minutes or until the mixture has a thicker consistency.
  • In a glass, place a layer of yogurt, a layer of oatmeal, and another layer of guava; repeat until finishing with guava. Decorate with orange and lemon slices.
