Ingredients

6 portions
  • 1 1/2 cups guava, chopped into small cubes
  • 1/4 cups Water
  • 1/4 cups piloncillo, ground
  • 1 teaspoon cinnamon powder
  • enough lemon peel, (or other citrus)
  • 2 cups oats
  • 1/4 cups peanut
  • 1/4 cups cranberry
  • 1/4 cups Pumpkin pip
  • 1/4 cups amaranth
  • 1 cup yogurt
  • 3 tablespoons honey
  • 2 tablespoons lemon juice
  • enough lemon zest
  • enough orange, to decorate
  • enough lemon, to decorate

Preparation

In a saucepan, cook the guava together in water with the piloncillo, ground cinnamon and citrus peel for 8 minutes. Cool
In a pan over medium heat, toast the oatmeal while still moving. Add the peanut, cranberry, pumpkin seed and amaranth; mix and toast for 10 more minutes over low heat and still moving. Reservation.
In a bowl mix the yogurt with honey, lemon and zest until integrated. Chill for 30 minutes or until the mixture has more consistency.
In a glass cup, place a layer of yogurt, one of oatmeal and one of guava; Repeat until finished with guava. Garnish with slices of orange and lemon.

PRESENTATION

Serve in a glass cup and arrange the yogurt, oatmeal and guava in layers. Garnish with lemon and orange slices.

TIPS

If you want the yogurt to have a thicker consistency, add cream cheese or double cream and beat until incorporated.
