Oats with Apple Puree

This delicious oatmeal recipe works well as both a breakfast and a dessert, and in both cases, it's perfect for when you don't have much time or want to use up ripe fruit you have at home. Since sugar acts as a preservative, the puree will last in the refrigerator. You can also use this recipe to accompany it with bread or consume it on its own.

  • 5 apples, for the puree
  • water, for the puree
  • 1 cup sugar, for the puree
  • 2 tablespoons lime juice, for the puree
  • 1 stick cinnamon, for the puree
  • 2 cloves, for the puree
  • 2 cups oats
  • 1/4 cups pecans, for the oats
  • 1/4 cups raisins, for the oats
  • 1/4 cups peanuts, for the oats
  • 1 cup yogurt, for serving
  • honey, for garnishing

  • For the puree, using a peeler, remove the skin from the apples and cut them into medium cubes. In a small pot over medium heat, boil water, add the apples, sugar, lemon juice, cinnamon, and clove, and cook until the apples are soft enough.
  • Remove the cinnamon and clove; strain and mash the apple over a bowl until it has a puree consistency. Set aside.
  • For the oats, in a skillet over low heat, toast the oats along with the nuts, raisins, and peanuts for 6 minutes. Set aside.
  • In a glass, place a bit of yogurt, add apple puree and granola, repeat until the glass is full and finish with oats. Garnish with a bit of honey and enjoy!
