This is a delicious way to prepare very healthy eggs. They are baked in a small dish in the oven along with spinach and a bit of feta cheese. They are a healthy option as they only have 120 calories per serving and 5 grams of carbohydrates.
Heat the olive oil in a skillet and add the onion. Cook for 3 minutes, until translucent. Add the garlic and cook for another 30 seconds. Finally, add the spinach and a little salt. Cook until wilted, about 30 seconds. Remove from heat and add a pinch of nutmeg.
Grease 4 ramekins (or you can use cups) with olive oil. Place a tablespoon of the spinach mixture in each ramekin and 1 tablespoon of cheese.
Crack 1 egg into each ramekin and sprinkle with a little more cheese, salt, and pepper.
Bake in the oven for 12-14 minutes, until the egg is cooked but still jiggles a bit. Serve immediately.
