These delicious lion-faced hotcakes are perfect for starting the morning with kids. They are fluffy, soft, and come with a delicious peach syrup that kids will love. It's a perfect and easy breakfast to make.
Mix the apple cider vinegar with the milk and let it sit for 10 minutes. This is to separate the whey from the milk, which will help the hotcakes become fluffier.
Place the flour, baking powder, sugar, salt, milk with vinegar, and oil in the blender. Blend until you have a smooth batter.
Add the egg and blend again. Drizzle in the vegetable oil while blending. Once all ingredients are combined, let it rest for 10 minutes.
Grease a hot skillet with a bit of butter and pour a ladle of the mixture. Cook for 3 minutes or until bubbles appear on the surface. Flip the hotcake to cook the other side. Repeat until all the batter is used.
For the peach syrup, peel the peaches and blend them with 2 tablespoons of water. Strain the mixture to remove the pulp.

Place one or two hotcakes on a plate and arrange the strawberries and carrots around to form the mane. Place half a peach to create the mouth, use blueberries for the eyes, and a raspberry for the nose.
Serve with the peach syrup.
