For the blueberry sauce, in a saucepan mix the maple syrup and the dried blueberries. Cook over medium heat until it boils.
Lower the heat and stir for 8-10 minutes until the fruit is soft. Reserve and keep warm.
For the nut pancakes, in a bowl mix the Gamesa® Pancake Flour, milk, eggs, butter, nuts, and cinnamon. Mix well until a smooth and lump-free batter is formed.
In a pre-greased hot skillet, add 1/4 cup of the mixture and cook until bubbles appear on top and the bottom of the pancake is golden brown. Flip and repeat with the remaining mixture until all pancakes are cooked.
Serve with the warm blueberry sauce.
