This omelet is very tasty and fresh thanks to its pico de gallo filling. The recipe is the traditional omelet with delicious tomato sauce.

1 tomato, peeled and diced
1 onion, in cubes
1 serrano chile, chopped
4 tablespoons fresh cream
8 eggs
1/2 cups water
1/2 tablespoons salt
1 tablespoon butter
sprigs fresh cilantro

In a medium bowl, mix the tomato, onion, cilantro, chili, and cream (pico de gallo).
In a medium skillet (preferably non-stick), heat 1/4 tablespoon of butter over medium heat.
Pour 1/2 cup of the egg mixture into the skillet and cook, carefully separating the edges with a spatula. Cook for 1 minute.
Place 1/4 of the pico de gallo mixture in the center of the omelet and fold the other half over the filling. Cook for 1 more minute.
Remove from the skillet, place on a warm plate, and repeat with the remaining 3 omelets.
