Pineapple Atole

  • 1 pineapple, ripe
  • 2 piloncillos
  • 4 sticks cinnamon
  • 1/2 kilos masa dough
  • 3 liters water

  • Peel and blend the pineapple with the water.
  • Strain directly into a pot, set aside a little, and bring the rest to a boil along with the piloncillo and cinnamon.
  • Dissolve the masa in the water you set aside and strain.
  • When the water in the pot starts to boil, gradually add the dissolved masa while stirring continuously to avoid lumps.
  • Boil for about 5 minutes and enjoy.
