Pineapple Upside-Down Pancakes

Flip the pancake recipes with this wonderful version that fuses your favorite breakfast with the classic pineapple upside-down cake. The pineapple upside-down pancakes not only have great flavor but are also healthy and very easy to make. These pancakes will have a light and fluffy texture thanks to Rexal® baking powder.   • 3/4 cups whole-wheat flour, 85 grams
  • 3/4 cups oat flour, 85 grams
  • 1 tablespoon REXAL® baking powder, 15 grams
  • 2 tablespoons piloncillo, grated, 30 grams
  • 1/2 teaspoons salt, 4 grams
  • 2 tablespoons butter, melted, 30 ml
  • 1 1/2 cups oat milk
  • 1 egg
  • 1 teaspoon D'Gari vanilla essence, 7 ml
  • syrup D'Gari flavor maple sugar free
  • 1 golden ripe pineapple, sliced for the pancakes
  • 1 cup cherries, natural, boneless, halved

  • In a bowl, mix whole wheat flour, oat flour, Rexal® Baking Powder, piloncillo, salt, butter, oat milk, egg, and vanilla extract using a whisk or a fork. Cover with plastic wrap and refrigerate for 10 minutes.
  • Heat a skillet over high temperature and pour in some D’Gari Maple Flavor Sugar Free Syrup, add the pineapple and half a cherry in the center of the pineapple; pour a ladle of the pancake mixture on top and lower the temperature.
  • Cook for about 8 minutes, then flip. Repeat the process until the pancake mixture is finished.
  • Serve the pancakes accompanied by D’Gari Maple Flavor Sugar Free Syrup and your preferred beverage. Enjoy them warm.
