  • 10 San Juan® eggs
  • water
  • white vinegar
  • 500 grams masa dough
  • 400 grams refried beans
  • 10 avocados, in wedges
  • green salsa
  • red salsa
  • salt
  • lard

  • Boil the water along with the vinegar. Once boiling, separate the San Juan eggs from their shells.
  • Add one egg at a time, once the vinegar and water are perfectly mixed and a whirlpool is forming. Cook for 2 minutes and remove.
  • Form medium balls of 50 grams with the corn dough. Flatten each one, shape them, and place each on a griddle until cooked. When removed, let them cool and pinch the edges to shape them.
  • Spread the refried beans over the sope and then place the poached egg on top.
