Poached Eggs in Chilpotle Chile

  • 2 boxes Del Fuerte® ground tomatoes with chipotle chiles, 210 g, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 cup chicken bullion, for the sauce
  • salt, for the sauce
  • pepper, for the sauce
  • 2 tablespoons vegetable oil
  • 6 eggs
  • 1 cup nopal, cut into strips and cooked
  • 1/4 cups parsley, finely chopped
  • 1/2 cups Cotija cheese, in pieces
  • sandwich bread, toasted

  • For the sauce: Blend the Del Fuerte® Tomato Sauce with Chilpotle Chile, onion, garlic, chicken broth, salt, and pepper for 5 minutes.
  • Pour the oil into a cast-iron skillet and cook the sauce over medium heat for 5 minutes.
  • Add the eggs one by one and very carefully so as not to break them. Add the nopales, season with salt and pepper, and incorporate the parsley and cotija cheese. Cook the poached eggs for 6 minutes.
  • Serve the poached eggs in chilpotle chile in the same skillet and accompany with toasted sandwich bread.
