Quinoa with Cinnamon Apples

Start the day with a healthy dish of quinoa accompanied by sweet and soft cubes of apple with a touch of cinnamon and cardamom. In the end, you will be surprised by the crunchy sensation of the caramelized walnut.

  • 2 cups water
  • 1 cup quinoa, rinsed
  • 2 cups almond milk
  • 1/4 cups sugar
  • 4 apples, cut into cubes
  • 1 stick cinnamon
  • 1/4 teaspoons cardamom
  • 1 star anise pod
  • 4 tablespoons candied pecans

  • In a small pot, heat the water; when it comes to a boil, add the quinoa, cook on low heat and covered for about 20 minutes; set aside.
  • Heat the almond milk with the sugar in a pot over medium heat. Add the apples, cinnamon, cardamom, and star anise. Cook for 5 minutes or until the apples are soft inside. Strain and set aside.
  • Serve the quinoa with the apples and decorate with caramelized walnut.
