Try this rich recipe as breakfast, a good plate of quinoa with milk and mango will give you all the energy necessary to start your active day and with the best attitude.
Place the quinoa in a saucepan with the milk, sugar and bring to a boil. Over low heat, leave it for about 10 minutes.
Add half the coconut milk and continue simmering until you see that the quinoa is ready and separates from the germ.
Remove from heat, add the rest of the coconut milk and stir while cooling. The consistency should be like a creamy milk rice, if you see that you have a bit dry add a little more milk or coconut milk. Your choice.
Place the pieces of chopped mango on top. You can also liquefy it and mix it with quinoa with milk.
Decorate with mint.
