Raspberry Muffins with Sugar

  • Preheat the oven to 200 degrees.
  • Place muffin liners in a cupcake tray.
  • In a medium bowl, mix 1 3/4 cups of flour, 1/2 cup of sugar, the baking powder, and salt.
  • Add the melted butter and stir well.
  • In another bowl, whisk the egg, milk, and vanilla.
  • Gradually add the milk mixture to the flour mixture, stirring until combined (the mixture will be a bit lumpy).
  • Mix the raspberries with the remaining flour.
  • Gradually add the raspberries to the batter until well combined.
  • Fill each muffin liner until they are 3/4 full.
  • Sprinkle the muffins with the remaining sugar.
  • Bake for 17-20 minutes until a toothpick inserted into the muffin comes out clean.
  • Transfer to a wire rack and let cool for 10 minutes.
  • Serve warm.
