Red Chile Chicken Tamales

Tamales are a traditional Mexican dish made with masa dough filled with either sweet or savory ingredients and steamed and wrapped in corn husks or banana leaves. This recipe for red chile chicken tamales features a delicious combination of chiles, tomatillo, and chicken that come together in a tasty dish everyone will love.

  • banana leaf, roasted
  • 6 cups masa mix for tamales
  • 4 cups chicken broth
  • 3 cups lard, melted
  • 2 cups chicken, cooked
  • 10 guajillo chiles, seeded and rehydrated
  • 6 tomatillos, roasted
  • 1 tablespoon salt
  • 1 clove garlic
  • 1/2 tablespoons cumin
  • 2 allspice berries
  • 1 clove
  • 1 tablespoon lard

  • For the sauce: Combine chiles, salt, garlic, clove, allspice, cumin, and tomatillos in a blender and blend until smooth. Set aside.
  • In a pot heat lard. Add sauce and chicken. Cook for 5 minutes.
  • For the tamal dough: In a bowl mix masa mix for tamales and lard. Once the dough can be balled without crumbling, add chicken broth little by little until a soft and fluffy dough is obtained. Set aside.
  • For assembling the tamales: Add one tablespoon of tamal dough to each banana leaf and make a thin layer. Add one tablespoon of chicken in red sauce and close the tamal.
  • In a steamer, cook tamales for 1 hour or until cooked through.
  • Serve red chile chicken tamales with café de olla.
