These delicious tamales are ideal for a delicious dinner, for their delicious combination of chili peppers, green tomato and rich chicken. Be sure to try this delicious recipe.

Ingredients

6 portions
  • banana leaf, roast
  • 6 cups masa mix for tamales
  • 4 cups chicken broth
  • 3 cups lard, melted
  • 2 cups chicken, Cooked
  • 10 guajillo chiles, deveined and soaked
  • 6 green tomatoes, roast
  • 1 tablespoon salt
  • 1 clove garlic
  • 1/2 tablespoons cumin
  • 2 allspice berries
  • 1 whole clove
  • 1 tablespoon lard
  • salt

Preparation

In a blender, blend the chilies, salt, garlic, cloves, allspice, cumin and tomatoes for 10 minutes. Reservation.
In a pot, heat the butter and add the sauce and the chicken cook for 5 minutes.
In a bowl mix the flour with butter, when your dough can form a ball without falling apart, add the chicken broth little by little until it forms a soft and fluffy dough. Reservation.
Add a tablespoon of the dough on the banana leaf and form a thin layer, add a tablespoon of the chicken with red sauce and close the tamale leaf.
In a steamer cook the tamales for 1 hour or until they are cooked.
Serve on a plate and accompanied by a café de olla.

PRESENTATION

Present it on a gray plate and decorate with some golden guajillo chili slices.

TIPS

Another way to make the flat dough of your tamale is to pass it in a tortilla press and place it on the corn husk.
