Red Enchiladas

Enchiladas are a delicious recipe where chicken is cooked inside a tortilla in a tomato sauce and topped with cheese. They are a popular dish in Mexican cuisine that you cannot miss.

  • In a large skillet over medium heat, sauté the onions, jalapeño, and garlic in oil. Cook for 7 minutes.
  • Add the piquin chili, cumin, and pepper and cook for 1 more minute.
  • Add the tomatoes and cook for 3 minutes. Remove from heat and allow the sauce to cool. In a food processor or blender, purée the sauce.
  • In a large deep bowl, mix the chicken with 1/2 cup of the sauce.
  • Preheat the oven to 200 degrees Celsius.
  • In a large baking dish, place the tortillas (you can brush a little vegetable oil on each one to help them brown). Heat the tortillas for 2-3 minutes until they are soft and manageable.
  • In the baking dish, put 1/2 cup of the sauce. Take each tortilla, fill it with two tablespoons of chicken, and roll it up.
  • Arrange all the enchiladas in the baking dish with the opening facing down so they don’t open. Cover with the remaining sauce and the manchego cheese and bake for 10 minutes.
