Red enchiladas

Enchiladas are a delicious recipe where chicken is cooked inside an omelet in a tomato sauce and grated with cheese. They are a popular dish of Mexican cuisine that you can not miss.

  • 2 onions, chopped
  • 2 Jalapeño chiles, without chopped seeds
  • 2 tablespoons garlic
  • 2 tablespoons vegetable oil
  • 1/4 cups piquín chile, powdered
  • 2 tablespoons cumin
  • 2 cans tomato, in its juice
  • 2 cups chicken, boiled and deshebrado
  • 12 corn tortillas

  • 1 cup Manchego cheese, grated

  • In a large skillet over medium heat, brown the onions, jalapeño and garlic in the oil. Cook for 7 minutes.
  • Add the chili pepper, cumin and pepper and cook for 1 minute more.
  • Add the tomatoes and cook for 3 minutes. Remove from heat and allow sauce to cool. In a food processor or blender make the sauce puree.
  • In a large bowl, mix chicken with 1/2 cup of sauce.
  • Pre-heat the oven to 200 degrees Celsius.
  • In a large baking dish place the tortillas (you can put a little vegetable oil each to brown). Heat the tortillas for 2-3 minutes so they are soft and manageable.
  • In the baking dish put 1/2 cup of the sauce. Take each tortilla and fill it with two tablespoons of chicken and roll it up.
  • Arrange all the enchiladas in the baking dish with the opening facing down so they do not open. Top with remaining manchego sauce and cheese and bake for 10 minutes.
