Enchiladas are a delicious recipe where chicken is cooked inside an omelet in a tomato sauce and grated with cheese. They are a popular dish of Mexican cuisine that you can not miss.

Ingredients

4 portions
  • 2 onions, chopped
  • 2 jalapeno, without chopped seeds
  • 2 tablespoons garlic
  • 2 tablespoons vegetable oil
  • 1/4 cups piquín chili, powdered
  • 2 tablespoons cumin
  • 2 cans tomtato, in its juice
  • 2 cups chicken, boiled and deshebrado
  • 12 corn tortillas
  • vegetable oil
  • 1 cup Manchego cheese, grated
  • pepper

Preparation

In a large skillet over medium heat, brown the onions, jalapeño and garlic in the oil. Cook for 7 minutes.
Add the chili pepper, cumin and pepper and cook for 1 minute more.
Add the tomatoes and cook for 3 minutes. Remove from heat and allow sauce to cool. In a food processor or blender make the sauce puree.
In a large bowl, mix chicken with 1/2 cup of sauce.
Pre-heat the oven to 200 degrees Celsius.
In a large baking dish place the tortillas (you can put a little vegetable oil each to brown). Heat the tortillas for 2-3 minutes so they are soft and manageable.
In the baking dish put 1/2 cup of the sauce. Take each tortilla and fill it with two tablespoons of chicken and roll it up.
Arrange all the enchiladas in the baking dish with the opening facing down so they do not open. Top with remaining manchego sauce and cheese and bake for 10 minutes.

PRESENTATION

Serve with cream.

TIPS

You can also use flour tortillas.
