  • 1 cauliflower
  • 1 tablespoon olive oil
  • 1/4 cups Parmesan cheese
  • 2 tablespoons garlic powder
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 4 eggs
  • 1 avocado, cut into wedges
  • oregano, fresh

  • Preheat oven to 392 °F.
  • Cut cauliflower into 1 to 2-finger thick slices. Arrange cauliflower slices on a baking sheet. Drizzle olive oil on top of cauliflower slices. Sprinkle Parmesan cheese, garlic powder, salt, and pepper on top.
  • Bake for 15 minutes or until cauliflower is cooked through and turns golden brown. Remove from oven and set aside.
  • Heat a skillet over medium heat and spray a bit of cooking spray. Crack an egg and cook to desired doneness. Season.
