Try this delicious breakfast of scrambled eggs with machaca, which consists of egg with beans. You will love this recipe because it is the perfect combination of Huevos San Juan® with machaca and beans to start your day.
1 tablespoon epazote, finely chopped, for the beans
2 tablespoons vegetable oil
1/4 cups onion, finely chopped, for the machaca
1 cup tomato, finely chopped, for the machaca
1 serrano chile, finely chopped, for the machaca
1 cup machaca beef
onion, in thin strips
plantain, fried

In a bowl, beat the Huevos San Juan® until you obtain a homogeneous mixture.
In a pan, heat the oil and fry the onion for 5 to 6 minutes until golden brown. Then add the beans and epazote, and fry for 3 minutes until dry, so you can mix them with the egg.
Move the beans to one side of the pan and leave half of the pan clear to make the egg with machaca.
Pour in oil and fry the onion, tomato, and serrano chili. Add the machaca and let cook for 3 minutes.
Pour the previously whisked Huevos San Juan® and mix with a wooden spatula. When the egg is almost cooked, mix it with the beans to form a roll.
Serve on a wide plate and decorate with plantain and red onion.
