2 tablespoons olive oil, for cooking eggs and Eva® spinach
1/4 onions, finely chopped
1 clove garlic, finely chopped
1 slice smoked salmon
1 egg, whisked
1 tablespoon dill, fresh and chopped
1 pinch salt
1 pinch pepper
1 cup Eva® spinach

In a skillet, heat olive oil over medium heat. Add onion, garlic, and lox. Cook until cooked through. Add egg and dill and cook until cooked through stirring occasionally. Season.
Remove from skillet. Serve salmon & spinach scrambled eggs with Eva® spinach drizzled with olive oil.
