Salmon & Spinach Scrambled Eggs

  • 2 tablespoons olive oil, for cooking eggs and Eva® spinach
  • 1/4 onions, finely chopped 
  • 1 clove garlic, finely chopped 
  • 1 slice smoked salmon
  • 1 egg, whisked
  • 1 tablespoon dill, fresh and chopped 
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup Eva® spinach

  • In a skillet, heat olive oil over medium heat. Add onion, garlic, and lox. Cook until cooked through. Add egg and dill and cook until cooked through stirring occasionally. Season.
  • Remove from skillet. Serve salmon & spinach scrambled eggs with Eva® spinach drizzled with olive oil.
