1 pinch pepper
1/2 tablespoons parsley
1 tablespoon unsalted butter
50 grams goat cheese
3 tablespoons Parmesan cheese, grated

Clean the spinach, chop it, and dry it.
Mix eggs, grated cheese, salt, pepper, and parsley.
Melt the butter in a pan and pour in the egg mixture. Cook over medium heat until well cooked and starting to brown.
Add the spinach and slices of goat cheese. Fold it and cook for one more minute. Serve immediately.
