Spinach Omelet with Goat Cheese

Omelet with a delicious combination of spinach and goat cheese.

  • 10 leaves spinach
  • 3 eggs
  • 1 pinch salt
  • 1 pinch pepper
  • 1/2 tablespoons parsley
  • 1 tablespoon unsalted butter
  • 50 grams goat cheese
  • 3 tablespoons Parmesan cheese, grated

  • Clean the spinach, chop it, and dry it.
  • Mix eggs, grated cheese, salt, pepper, and parsley.
  • Melt the butter in a pan and pour in the egg mixture. Cook over medium heat until well cooked and starting to brown.
  • Add the spinach and slices of goat cheese. Fold it and cook for one more minute. Serve immediately.
