Clean spinach, cut it and dry it.
Mix eggs, grated cheese, salt, pepper and parsley.
Melt the butter in a pan and pour the egg mixture. Cook over medium heat until it is well cooked and begins to brown.
Put the spinach and slices of goat cheese. Bend it and cook one minute more. serve immediately.
