Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
Add half of the onion and garlic and brown for 2-3 minutes. Add the spinach and cook for 5 minutes or until well cooked. Season with salt and pour into a deep dish.
Fill tortillas with spinach and a little cheese. Cook the quesadillas either in a comal (if you want them without fat) or in oil if you prefer fried.
