Sunny Side Up Eggs with Couscous

  • Place the cup of hot, hydrated couscous as indicated on the packaging, onto a deep plate.
  • In a skillet, add olive oil; when it's hot, crack the two eggs and let them cook until the yolk is not too hard but a bit runny and juicy.
  • We add the eggs over the couscous and in the same skillet we roast the panela cheese until it is golden on both sides.
  • We place the cheese on the same plate along with the egg and garnish with parsley, salt, and pepper to taste
