1 cup couscous, cooked
2 eggs
150 grams panela cheese
olive oil, sufficient amount
salt, and pepper to taste

Place the cup of hot, hydrated couscous as indicated on the packaging, onto a deep plate.
In a skillet, add olive oil; when it's hot, crack the two eggs and let them cook until the yolk is not too hard but a bit runny and juicy.
We add the eggs over the couscous and in the same skillet we roast the panela cheese until it is golden on both sides.
We place the cheese on the same plate along with the egg and garnish with parsley, salt, and pepper to taste
