Swiss Enchiladas with Cream Cheese

  • 190 grams cream cheese
  • 1 kilo tomatillo
  • 1 onion, finely chopped
  • 3 tablespoons vegetable oil
  • 1/2 cups fresh cilantro, finely chopped
  • 2 tablespoons chicken bullion
  • 18 corn tortillas, thin fried
  • 2 chicken breasts, cooked and shredded
  • 8 slices Manchego cheese

  • Boil the tomato in salted water. When it changes color and becomes paler, remove and let drain.
  • Sauté the onion in the oil. Once soft, blend with the tomato, cilantro, chicken broth concentrate, and cream cheese.
  • Form tacos filled with chicken and arrange three on each plate.
  • Pour the sauce over and top with slices of Manchego cheese.
  • Heat in the microwave until the cheese melts.
