Swiss Enchiladas without Tortilla

This is the perfect breakfast for any day of the week, as these delicious Swiss enchiladas with Virginia Chicken FUD® are filled with zucchini omelette, a delight for the palate that will leave you satisfied and energized.

  • 1 tablespoon vegetable oil
  • 1/4 onions
  • 1 clove garlic
  • 8 tomatillos, in halves
  • 1 Habanero chile
  • 1 teaspoon cumin, whole
  • 3 allspice berries
  • 1/2 cups cilantro
  • 1/2 cups chicken broth
  • 1/2 cups cilantro
  • 1 teaspoon vegetable oil
  • 1/2 cups onion, finely chopped
  • 1/2 cups garlic, finely chopped
  • 3 tomatoes, in cubes
  • 2 zucchinis, in cubes
  • 8 eggs, beaten
  • salt
  • pepper
  • 1 package FUD® Virginia chicken ham, 250 g
  • 1/2 cups sour cream
  • 150 grams Fud® Manchego cheese
  • onion, in rings, for garnish
  • cilantro leaves, for garnish

  • For the sauce, in a pan, pour the vegetable oil and cook the onion, garlic, tomatillo, habanero pepper, cumin, black pepper, and cilantro for 5 minutes; add the chicken broth and cook for 15 minutes until reduced by half. Blend with more cilantro for 5 minutes and set aside.
  • To form the enchiladas, in a pan, cook the onion, garlic, tomato, and zucchini with the vegetable oil for 5 minutes or until softened, then add the scrambled egg, salt, pepper, and cook on low heat, flipping and cooking for another 3 minutes, remove from heat and place the Virginia Chicken FUD®, the omelette on a board and roll. Repeat the process until several rolls are formed.
  • Place in a baking dish, cover with the sauce, pour a little sour cream, and sprinkle with Queso Manchego FUD®.
  • Bake for 15 minutes or until the Queso Manchego FUD® melts.
  • Serve and garnish with onion and cilantro. Enjoy.
