No-Tortilla Swiss Enchiladas

This is the perfect breakfast for any day of the week, as these flavorful FUD® virginia chicken ham Swiss enchiladas are stuffed with zucchini omelet to delight your palate, leaving you feeling satisfied and full of energy.

  • 1 tablespoon vegetable oil
  • 1/4 onions
  • 1 clove garlic
  • 8 tomatillos, cut into halves
  • 1 Habanero chile
  • 1 teaspoon cumin, whole
  • 3 allspice berries
  • 1/2 cups cilantro
  • 1/2 cups chicken broth
  • 1/2 cups cilantro
  • 1 teaspoon vegetable oil
  • 1/2 cups onion, finely chopped
  • 1/2 cups garlic, finely chopped
  • 3 tomatoes, cut into small-sized cubes
  • 2 zucchinis, cut into small-sized cubes
  • 8 eggs, beaten
  • salt

  • 1 package FUD® Virginia chicken ham, 8.8 oz
  • 1/2 cups sour cream
  • 150 grams Fud® Manchego cheese
  • onion, cut into rings, for garnish
  • cilantro leaves, for garnish

  • For the sauce: Pour vegetable oil in a frying pan. Cook onion, garlic, tomatillo, Habanero chile, cumin, allspice, and cilantro for 5 minutes. Add chicken broth and cook for 15 minutes until reduced by half. Transfer to a blender. Add more cilantro. Blend for 5 minutes and set aside.
  • For assembling the enchiladas: In a skillet, cook onion, garlic, tomato, and zucchini with the vegetable oil for 5 minutes or until softened. Add scrambled eggs, salt, and pepper. Cook over low heat, flip, and cook for 3 more minutes. Remove from the heat. On a chopping board place FUD® virginia chicken ham and the omelette and roll. Repeat the process to make several rolls.
  • Place on a baking dish. Spoon over sauce. Drizzle a bit of sour cream and sprinkle with FUD® Manchego cheese.
  • Bake for 15 minutes or until FUD® Manchego cheese melts.
  • Serve and garnish with onion and cilantro.
