This is the perfect breakfast for any day of the week, as these delicious Swiss enchiladas with Virginia Chicken FUD® are filled with zucchini omelette, a delight for the palate that will leave you satisfied and energized.
For the sauce, in a pan, pour the vegetable oil and cook the onion, garlic, tomatillo, habanero pepper, cumin, black pepper, and cilantro for 5 minutes; add the chicken broth and cook for 15 minutes until reduced by half. Blend with more cilantro for 5 minutes and set aside.
To form the enchiladas, in a pan, cook the onion, garlic, tomato, and zucchini with the vegetable oil for 5 minutes or until softened, then add the scrambled egg, salt, pepper, and cook on low heat, flipping and cooking for another 3 minutes, remove from heat and place the Virginia Chicken FUD®, the omelette on a board and roll. Repeat the process until several rolls are formed.
Place in a baking dish, cover with the sauce, pour a little sour cream, and sprinkle with Queso Manchego FUD®.
Bake for 15 minutes or until the Queso Manchego FUD® melts.
