Tamales for Candlemas

  • 5 cups corn masa flour
  • 4 cups chicken broth
  • 2 cups lard
  • 1 1/2 teaspoons baking powder
  • 4 Poblano chiles
  • 1 queso fresco
  • 1 can corn kernels
  • 1 can tomato sauce
  • 12 corn husks

  • Mix the maseca with the chicken broth, lard, baking powder, and salt to taste until a dough forms. Set aside.
  • Roast the poblano chiles on the stove and place them in a plastic bag to sweat. Then peel the chiles.
  • Cut the chiles into strips and add the tomato sauce, corn, and diced panela cheese to a pot. Cook a little and season with salt and pepper.
  • Place a little tamale dough on the corn husks and fill with the prepared strip mixture. (Note: make sure to use a small amount or else the tamales won't close properly)
  • Place to cook in a pot with steam over a plate or something so they are not touching the water.
