1 tablespoon unsalted butter
1 tablespoon fresh herbs, finely chopped (parsley, chives, basil)
salt , to taste
pepper, to taste

Heat the butter in a skillet approximately 20 cm over medium-high heat.
While the butter is heating, place the three eggs in a deep bowl and beat with a fork. Season with salt and pepper.
Pour the eggs into the skillet and reduce to medium heat. Using a spatula, stir the eggs and move the skillet for 1 minute.
Allow to cook for 15 to 30 seconds more without stirring so that the edges set.
Season with the chopped herbs.
Using the spatula, lift the edges and fold one third of the omelet over itself. Place on the serving plate and flip so that it falls in a roll.
