Preparation
Heat the butter in a pan of approx. 20 cm at medium high heat.
While the butter is heated in a deep bowl place the three eggs and beat with a fork. Season with salt and pepper.
Pour the eggs into the pan and lower to medium heat. With a spatula stir the eggs and move the pan for 1 minute.
Allow it to cook 15 to 30 seconds longer without moving so that the edges are fixed.
Season with chopped herbs.
With the spatula take off the edges and fold a third of the omelet on it. Place on the plate to serve and turn so that it is like a roll when falling.
