Tropical Muffins with Pineapple and Coconut

This tropical muffin recipe is low in fat and very delicious. They contain mashed bananas, pineapple, coconut, nuts, and oats.

1 cup oats
1 teaspoon baking powder
1/2 teaspoons salt
1/2 teaspoons baking soda
1 cup banana, ripe mashed
1 cup low-fat milk
1/2 cups brown sugar
2 tablespoons canola oil
1 teaspoon vanilla essence
1 egg
1/2 cups canned pineapple, canned, in its juice
1/3 cups grated sweet coconuts
3 tablespoons walnuts, toppings
2 tablespoons grated sweet coconuts, for decoration
1 tablespoon walnuts, chopped (for decoration)
1 tablespoon sugar, for decoration
1 tablespoon oats, old fashioned (for decoration)

Preheat the oven to 200 degrees.
Mix the flour, oats, baking powder, baking soda, and salt in a bowl.
Mix the mashed banana, milk, sugar, oil, egg, and vanilla in another bowl.
Make a well in the center of the flour. Add the egg mixture and stir until it is moist.
Add the pineapple, 1/3 cup of coconut, and 3 tablespoons of nuts.
Place the mixture onto a greased 12-cup muffin tray.
Prepare the topping: mix 2 tablespoons of coconut with the remaining ingredients in a bowl. Sprinkle each muffin with 1 teaspoon of this.
Put in the oven and bake for 18 minutes or until cooked.
Unmold and cool on a rack.
