This recipe for tropical muffins are low in fat and very rich. They carry crushed bananas, pineapple, coconut, nuts and oatmeal.

Ingredients

12 portions
  • 1 1/3 cups flour
  • 1 cup oats
  • 1 teaspoon baking soda
  • 1/2 teaspoons salt
  • 1/2 teaspoons baking soda
  • 1 cup banana, mature crushed
  • 1 cup low fat milk
  • 1/2 cups brown sugar
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cups Pineapple in syrup, canned, in its juice
  • 1/3 cups grated sweet coconut
  • 3 tablespoons walnut, toasts
  • 2 tablespoons grated sweet coconut, to decorate
  • 1 tablespoon walnut, chopped (to decorate)
  • 1 tablespoon sugar, to decorate
  • 1 tablespoon oats, old fashioned (to decorate)

Preparation

Preheat the oven to 200 degrees.
Mix flour, oatmeal, baking powder, baking soda and salt in a bowl.
Mix the crushed banana, milk, sugar, oil, egg and vanilla in another bowl.
Make a hole in the center of the flour. Add the egg mixture and stir until it is moist.
Add the pineapple, 1/3 cup of coconut, and 3 tablespoons of nuts.
Put the mixture on a tray of 12 muffins previously greased.
Prepare the decoration: mix 2 tablespoons of coconut with the rest of the ingredients in a bowl. Sprinkle each muffin with 1 teaspoon of this.
Bake and cook for 18 minutes or until cooked.
Unmold and cool in a rack.
