Vegetable Frittata

This delicious breakfast is very complete to start your daily diet. This tasty frittata is accompanied by mushrooms, red bell pepper, green beans, and a touch of scallions, making it very nutritious and complete to start the day.

  • 1 cup egg white
  • 1 cup white mushroom, sliced
  • 1/4 cups green beans, blanched
  • 1/4 cups red bell pepper, cut into julienne
  • 1/4 cups chia seeds, rehydrated
  • 1 pinch salt
  • 1 pinch pepper
  • 1/4 cups green onion, scallions, cut into rings

  • Preheat the oven to 180° C
  • In a bowl, mix the eggs, mushrooms, green beans, red bell pepper, and chia, seasoning to your taste.
  • In a greased skillet, add the mixture and bake for 20 minutes covered.
