Waffles with Blackberries and Cinnamon

  • 2 cups flour
  • 2 tablespoons baking powder
  • 1/2 tablespoons salt
  • 4 eggs, separate yolks and whites
  • 2 tablespoons sugar
  • 2 cups whole milk
  • 1/2 sticks unsalted butter
  • 1/2 tablespoons vanilla essence
  • 2 tablespoons cinnamon powder
  • 2 cups blueberries

  • Pre hot the waffle maker.
  • In a deep bowl, mix flour, baking powder and salt.
  • In another deep bowl whisk the egg yolks with the sugar until the sugar is completely dissolved. Add the milk, the melted butter, the vanilla essence and the cinnamon and beat with a glbo beater.
  • Combine the flour mixture with the egg and whisk mixture.
  • With an electric mixer beat the egg whites for 1 minute until they are about to nougat. With a wooden spoon mix the egg whites with the flour and egg mixture. Add the blueberries and incorporate with the wooden spoon.
  • Grease the waffle with cooking spray and place enough dough to make 1 waffle. Close the waffle maker and cook 2-3 minutes or until lightly browned. Repeat with the remaining waffles.
