  • Melt the 6 tablespoons of butter in a large skillet and add the 1/3 cup of sugar. Mix allowing the sugar to dissolve.
  • Cut the apples into strips and cook in the sugar and butter mixture for 10 minutes. Add the whipped cream and continue cooking for 2 minutes. Remove from heat.
  • Meanwhile, mix in a deep bowl the flour, remaining sugar, whole wheat flour, baking powder, ground ginger, cinnamon, salt, pepper, and cloves.
  • In a small bowl, mix the milk with the lemon juice and let it rest for 5 minutes.
  • Add the milk, honey, and eggs to the flour mixture and mix well with a whisk.
  • Add the butter and orange zest and finish by whisking well.
  • Grease your waffle maker with cooking spray and heat for 2-3 minutes.
  • Make the waffles in batches (based on the size of your waffle maker) until they are lightly golden. While cooking the rest of the batter, cover the ones you've already made so they don't cool down.
  • Serve the waffles with 2 tablespoons of the caramelized apple mixture.
