Fry the beans and set aside. Blanch the tortillas and set aside, removing excess fat. Slice the plantains and fry them, also set aside and remove excess fat.
Prepare the sauce by mixing the tomato, garlic, 1 chili, half an onion, and a little chicken broth, and fry the sauce until it comes to a boil. Then, add the whole chilies.
Now fry the eggs, 2 per plate, spread the beans on one tortilla and place another on top, leaving one egg on 2 tortillas filled with beans. Place the egg on top, then the prepared sauce, ham, cheese, and peas on top.
Garnish with fried plantains and beans.
