Yucatecan Motuleños Eggs

Yucatecan motuleños eggs are perfect for breakfast, served on tortilla and beans with a spicy tomato sauce and fried plantains.

  • 6 eggs
  • 12 tortillas
  • 250 grams beans, mashed
  • 200 grams deli ham, of your preference
  • 200 grams American cheese
  • 2 plantains
  • peas
  • 3 tomatoes
  • 1 green onion, medium
  • 1 garlic
  • chicken broth, suggested
  • sandwich bread, toasted
  • strawberry jams
  • 3 Habanero chiles

  • Fry the beans and set aside. Blanch the tortillas and set aside, removing excess fat. Slice the plantains and fry them, also set aside and remove excess fat.
  • Prepare the sauce by mixing the tomato, garlic, 1 chili, half an onion, and a little chicken broth, and fry the sauce until it comes to a boil. Then, add the whole chilies.
  • Now fry the eggs, 2 per plate, spread the beans on one tortilla and place another on top, leaving one egg on 2 tortillas filled with beans. Place the egg on top, then the prepared sauce, ham, cheese, and peas on top.
  • Garnish with fried plantains and beans.
