Zucchini and Prosciutto Frittata

  • 1 tablespoon olive oil
  • butter, for greasing
  • 2 zucchinis, thinly sliced small
  • 1 red bell pepper, seedless and chopped
  • 1 onion, finely chopped
  • 70 grams prosciutto, coarsely chopped
  • 2 red potatoes, peeled, cooked, and thinly sliced
  • 4 eggs
  • 2 tablespoons cow's milk
  • 100 grams Parmesan cheese, grated

  • Preheat the oven to 180ºC.
  • Grease a 8x12cm mold and 4 cm high.
  • Heat oil in a skillet, sauté the onion for 5 minutes, then add zucchini, bell pepper, and potatoes, cook for 5 more minutes. Add prosciutto, cook for 1 minute.
  • Place the vegetables in the mold in a layer. Beat eggs, milk, salt, and pepper, add parmesan, and pour it over the vegetables. Bake for 25 to 30 minutes.
  • Let it rest for 10 minutes before serving and cut into 4 pieces.
