Ingredients

2 portions
  • 1 tablespoon olive oil
  • butter, to grease
  • 2 zucchini, thin sliced ​​girls
  • 1 red pepper, seedless and chopped
  • 1 onion, finely chopped
  • 70 grams prosciutto, chopped big
  • 2 red potatoes, peeled, cooked and sliced ​​thin
  • 4 eggs
  • 2 tablespoons milk
  • 100 grams parmesan cheese, grated

Preparation

Heat oven to 180º.
Grease an 8x12cm mold. And 4 cm. High
Heat oil in a pan, fry the onion for 5 minutes, then add zucchini, pepper and potatoes, cook 5 minutes more. Add prosciutto, cook 1 minute.
Put the vegetables in the mold in a layer. Beat eggs, milk, salt and pepper, add Parmesan and put it on the vegetables. Bake 25 to 30 minutes.
Let stand 10 minutes before serving and cut into 4 pieces.

TIPS

Serve hot or warm with a salad.
