Zucchini Bread

If you've never had zucchini bread, it might sound like a strange idea, but... this bread is delicious and sweet! In fact, it doesn't taste like zucchini at all, and it has a wonderful flavor.

  • 3 1/4 cups flour
  • 1 1/2 teaspoons sugar
  • 1 teaspoon nutmeg
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs, beaten
  • 1/3 cups water
  • 2 cups zucchini, grated
  • 1 teaspoon lime juice
  • 1 cup walnuts, zucchini-bread

  • Preheat the oven to 180 degrees Celsius.
  • In a large bowl, mix the flour, salt, nutmeg, baking soda, cinnamon, and sugar.
  • In another bowl, mix the oil, eggs, water, zucchini, and lemon juice.
  • Add the wet ingredients (oil, etc.) to the dry ingredients (flour, etc.).
  • Add the walnuts and stir just a little until combined.
  • Pour the mixture into two elongated, greased, and floured loaf pans.
  • Bake in the oven for 1 hour.
