  • 3 cups flour, for the dough
  • 1/4 cups vegetable oil, for the dough
  • 2 tablespoons sugar, for the dough
  • 1 cup water, for the dough
  • 1 teaspoon salt, for the dough
  • 1 cup potato, in cubes, cooked
  • 1 cup carrot, in cubes, cooked
  • 1 cup peas, in cubes, cooked
  • 1 cup chicken breast, cooked and shredded
  • 1 1/2 cups McCormick® Lemon Mayonnaise, 390 g
  • salt and pepper
  • vegetable oil, for frying
  • avocado, to accompany
  • salsa, to accompany

  • In a bowl, mix the flour, vegetable oil, sugar, salt, and water. Once combined, remove from the bowl and continue kneading until you obtain a homogeneous and firm dough. Let it rest for 30 minutes.
  • For the russian salad: mix the potato, carrot, pea, chicken breast, and McCormick® Limones Mayonnaise. Once combined, season and set aside.
  • Divide the dough into 80-gram portions and roll out with a rolling pin on a floured surface. Shape it slightly oval, fill with the russian salad, and pinch the edges to close.
  • Fry the empanadas in a pan with oil for 7 minutes, remove, and place on absorbent paper to remove excess oil.
  • Serve the empanadas and accompany with avocado and sauce.
