1 tablespoon salt
10 guajillo chiles, deveined and seedless
5 ancho chiles, deveined and seedless
2 cloves garlic, without skin
1 tablespoon oregano
2 tablespoons raw sugar
1 sprig cinnamon
6 black peppercorns
1/2 cups apple cider vinegar
1/2 cups water
1 tablespoon salt

Preheat the oven to 180°.
Tie the loin with hemp string and season it.
Blend the chiles, garlic, oregano, brown sugar, cinnamon, pepper, vinegar, and water.
Add the mixture to the loin and marinate for 1 hour.
