Alfredo Chicken with Spinach

  • 1 tablespoon olive oil
  • 3 cups spinach
  • 1/2 cups goat cheese
  • 1/2 teaspoons chile seeds
  • 2 chicken breasts, boneless and skinless
  • 4 pinches salt
  • 2 pinches pepper
  • 2 pinches paprika
  • 1/3 cups Mozzarella cheese, shredded

  • Preheat the oven to 180°C.
  • In a skillet, heat the olive oil over medium heat. Cook the spinach until the liquid evaporates, then add the goat cheese and chili seeds. Cook for 3 minutes and set aside.
  • Using a sharp knife, make cuts in the chicken breasts crosswise without cutting all the way through, with 1 cm distance between each cut.
  • Fill each cut with the spinach mixture and season the breasts with salt and pepper. Add paprika and top with mozzarella cheese.
  • Place the breasts on a baking tray lined with aluminum foil and bake for about 25 minutes or until cooked through. Serve immediately.
