Arrachera Chimichanga

Prepare these delicious chimichangas filled with beans, juicy arrachera, asadero cheese, pico de gallo, and a perfect blend of the new McCormick® guacamole-flavored mayonnaise. All this combination of flavors wrapped in a fried flour tortilla. Delicious!

  • 1 tablespoon vegetable oil
  • 700 grams skirt steak, marinade to your liking
  • 3 tablespoons bacon, finely chopped
  • 3/4 cups refried beans
  • 1 1/4 cups asadero cheese , grated
  • 18 flour tortillas
  • vegetable oil , for frying
  • 1 McCormick® guacamole flavored mayonnaise
  • sour cream
  • pico de gallo
  • salt and pepper

  • In a medium grill pan, cook the arrachera with a tablespoon of oil to your desired doneness, season with salt and pepper. Cut into thin strips with a knife and set aside.
  • In a medium skillet, cook the bacon until it releases its fat, add the beans, and cook for 5 minutes. Adjust seasoning.
  • Assemble the chimichangas by spreading a bit of beans on each tortilla. Add strips of arrachera and asadero cheese, fold like a burrito, and fry in hot oil over medium heat until golden. Drain on paper towels.
  • Serve the chimichangas and garnish with McCormick® guacamole-flavored mayonnaise, sour cream, and pico de gallo.
