BBQ Chicken Salad

Surprise your guests with this delicious BBQ chicken salad recipe, which is prepared with a rich combination of Freshly by EVA® Sesame Ginger Salad, yellow corn, black beans, cheddar cheese, and a tasty sesame dressing.

  • 1/4 cups brown sugar
  • 2 cups ketchup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons paprika
  • 1 tablespoon onion powder
  • 1/2 tablespoons ground black pepper
  • 1 teaspoon Worcestershire sauce

  • 2 cups Freshly by EVA® Ginger Sesame Salad
  • 1 cup black beans, drained
  • 1/4 cups red onion, in thin slices
  • 1/4 cups cilantro, finely chopped
  • 1/4 cups cheddar cheese, shredded
  • 1/2 cups yellow corn, shucked

  • Cook the brown sugar with the ketchup, apple cider vinegar, paprika, onion powder, black pepper, and Worcestershire sauce in a pot. Season with salt, and cook on low heat for 10 minutes or until thickened.
  • Brush the chicken with the homemade BBQ sauce you prepared and let it marinate for 15 minutes. Cook the chicken on each side for 10 minutes over medium heat on a grill. Slice into strips and set aside.
  • Pour the Freshly by EVA® Sesame Ginger Salad into a bowl and mix with the black beans, red onion, cilantro, cheddar cheese, yellow corn, and finally, add the BBQ chicken.
  • Add the sesame dressing and sprinkle with almonds and fried tortilla. Enjoy!
