Beef Fillet with Chimichurri

If you love meat, prepare this fillet in a thin cut grilled and sliced into strips served with a delicious freshly made chimichurri, based on cilantro, parsley, red pepper, the strong touch of garlic, and a spicy touch of árbol chili. This is a flavorful dish for meat lovers.

  • 2 cloves garlic, for chimichurri
  • 1/4 bunches fresh cilantro, for chimichurri
  • 1/4 bunches parsley, for chimichurri
  • 1 red bell pepper, for chimichurri
  • 1 cup olive oil, ½ for chimichurri and ½ for meat marinade
  • 2 árbol chiles, for chimichurri
  • 1 tablespoon salt, for chimichurri
  • 1 tablespoon black peppercorn, for chimichurri
  • 3 tablespoons vinegar, for chimichurri
  • 1 tablespoon paprika, or paprika, for marinade
  • 1/2 kilos skirt steak, or beef fillet, cut into thin strips
  • salad, baby potatoes and wedge potatoes as a side.

  • Chop all the chimichurri ingredients finely, add to a bowl, mix and season to your liking. Let it rest and reserve in the refrigerator.
  • In a bowl, marinate the meat with olive oil and paprika, set the preparation aside in the refrigerator.
  • Heat a Vasconia® Basics frying pan with Teflon™ and cook the meat to your desired doneness, season to taste with a little more salt. Slice the meat and serve with the chimichurri you prepared earlier, accompany with a fresh salad, wedge potatoes, or baby potatoes as a side. Enjoy.
