Beef in Poblano Sauce with Zucchini

The sauce in this beef recipe is surprisingly delicious. It perfectly complements the flavor of the dish with the zucchini. A true delicacy.

  • 3 tablespoons olive oil
  • 1/2 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 3 cups beef tenderloin, cut into cubes
  • 2 cups pumpkin, cut into cubes
  • 2 cans Poblano chile cream, Campbell's®
  • 3 tablespoons parsley
  • 1 cup water

  • Heat the oil in a skillet over medium heat, add the onion, garlic, and fry for 2 minutes, increase the heat and add the beef, continue cooking for 3 minutes.
  • Remove excess fat if necessary, add the zucchini, and cook for 2 minutes.
  • Pour in the poblano cream plus one can of water, lower the heat, and simmer for 10 minutes; add the parsley. Remove from heat.
